Fiaschetteria Pistoia

Last week, Fiaschetteria Pistoia hosted Hayden and me for our 8-year anniversary. We usually go away on a trip to celebrate, but given we’ve just returned from Mexico ( <3 ) the week before…we stayed put, and went for a quick trip to Italy through Fiaschetteria Pistoia.

The restaurant has 2 locations in Amsterdam (plus one in Italy, and another 2 in New York), and it’s famous for its homemade delicious pasta. It’s been on pretty much every foodie’s list since they opened, so naturally, it’s been on my list too. My only concern? The dozens of reviews saying that you get “kicked out with the bill” real quick, leaving you no time to really enjoy the meal. The place is small (Jordaan location), so I can see how that can happen. However, we haven’t experienced this, and if you wanna make sure that you won’t either, I’d suggest reserving a table after 20:00.

The restaurant is casual and has a great vibe about it. I think if you get a table closer to the kitchen, you can even see part of the magic going down!

The first thing I really liked about our visit is…their wine menu.

Such a simple, cool concept to present a couple of good bottles. It’s the little things that stand out.

Hayden and I wanted to start with a glass of prosecco, and probably move on with beer – since we’ve already had beers previously that day. But that prosecco was so good, we just stuck with it for the whole meal. Probably should’ve asked what it was and where can one find it, because I’m definitely wondering as I type this…

We were both pretty hungry, so instead of our usual “let’s split an appetizer”, we got 2. In other words, we just ordered all the cheese on the menu. No ragrets. Not even one letter.

The burrata was the freshest we’ve ever had. Wherever they source their food from…they seriously know what they’re doing. It tasted like they just brought it from the backyard.

Now, before moving on to the mains, I need to give a special shoutout to…the bread. Hayden asked for a refill and couldn’t stop eating it, while saying, “this is the best bread I’ve had in my life”. So…there’s that. High praise.

For the main, I went with my heart and soul: truffles. Their tagliatelle al tartufo were amazing, and SO creamy. Some people say their portions are small for the price, but I couldn’t finish mine. Okay, may have something to do with ordering all the cheese for starters. Maybe some regrets?

Hayden had the gnocchi, which he also really enjoyed, but I guess weren’t up there with the bread; not the best he’s had in his life.

After the feast, we both looked with sad, sad eyes towards the dessert menu, which we had to skip. Okay, maybe more regrets related to all that cheese? Next time, I’d definitely wanna see what they can do with desserts, after tasting the other courses.

Fiaschetteria Pistoia has exceeded my expectations. Lately, Amsterdam is filled with Italian restaurants, many of them with good reviews and high prices. I rarely end up impressed, though. This was one of those good experiences, that I’ll happily recommend to my friends and to you, dear readers. Pay them a visit, have amazing bread, cheese, prosecco, pastaaaa…and maybe you can find place in your heart and stomach for dessert.
